If I use the email field in my form is the data secure?

i want use email field in form competitively evaluate vendors , products company. company nervous data protection / privacy because email field capture , store person , company identifiable information online.

 

i wanted use email field allow respondents save form , return later. there doesn't appear other way of doing this.

 

so question - how secure data email field. encrypted?
